Orange Potato Soup

When I was actually following the doctors orders and sticking to a bland diet, I made my mom's potato soup.  However, I also added a carrot to it - they help you see better at night.  It turned what is a normally pale colored potato soup into Orange Potato Soup.  It still had the same comforting qualities that my mom's soup has and has bland ingredient - not bland taste.

I'm not following the bland diet very well; however, I know that I should be.  I'm trying not to be too wild and crazy but it's hard for me to resist nuts and dried fruit - they are my favorite snack.  I am avoiding spicy food and trying to stay away from well known gassy veggies, like broccoli (my favorite vegetable!).


Start with two or three potatoes, peeled and diced. 


Add in one yellow onion, a couple celery stalks and a carrot.  (Usually, it's just an onion and a couple cloves of garlic.)


Add enough broth (chicken or vegetable) to cover the vegetables.  Let them simmer until they soft and tender, about 20 to 30 minutes.


Add about a half a cup of milk - or if you are feeling extra luxuriant, use cream.


Sprinkle some nutmeg, salt (if needed) and pepper in.  


Blend everything together until you get a soft and creamy texture.


Enjoy.  It's adds more heart to the soup if you add toppings.  I used plain yogurt, cheddar cheese and some scallions.  It'd also be good with croutons, sour cream, crumbled bacon or popcorn.  (I saw this post recently and can't get it out my head.  I haven't try it, yet.)  

This soup freezes great, so easy to make, and amazingly comforting on a cold day.
